Lots of options there for you. Will you be mostly target shooting or hunting? Or both? there are scopes around 200-400 that woudl work very well for you. Models to look at would be the Nikon Monarch, Bushnell Elite, Vortex Viper, Nikon Buchmaster, Redfield Revolution. the individular model and magnification range will depend on the yardage you are looking to shoot and your purpose.

it will mostly be for targets id like to get out past 500 yards but if coyotes or some other wild animals are attacking my livestock it will be for that kind of stuff too.Lots of options there for you. Aside from the Optics, if you are on a budget I would suggest the 308 instead of the 300 Win Mag. Cheaper ammo = More shooting. 308 will get you to 1000yds when you're ready for it. A decent fixed 10x scope is pretty good for your budget.
Like this one on sale at Midway. Great starter scope and once you get used to shooting with Mils, you will never go back to MOA

Just throwin in a consideration for the swfa ss fixed 10x. I agree with what dd and sap said about mounts rings and .308. Good luck with your search.Comment

SWFA SS is another great option as well comes in 16x as well. Make sure to get it with matching Mil knobs. Not sure if all models are standard like that now or not.Comment

You can find a nice platform 700, SPS maybe, in 308 for around $500-$550 online. That will leave a lot of room to put a nice optic and mount on there. also gives you a platform that is easy to upgrade as you go along; ie new stock.
Going along with DirtyDave, 308 may be the way to go. Can take down anything, walk you out to 1000 yards, and is cheaper than 300 Win Mag.
Scope wise, Check out the Nikon Monarch 4-16x42 sf. Sounds like you will be bouncing from pest control shooting from 50 yards to sometimes a few hundred, just some plinking, and then your target shooting. Having a variable magnification is nice if you are planning on shooting at or a little under 100 yards and then walking the ranged out. Scope will be under $400 with the 5% off coupon. Mount wise, EGW is nice and Burris makes teh Xtreme base for the 700 which is a nice product. Burris Xtreme rings or Weaver tactical rings are nice quality and not too pricey.
All said and done, rifle, scope, mounts, should all be around or just over $1000, and you will have a nice shooter there.
