This is probably a stupid question but do I need to purchase a mount/riser for an Eotech 511/512 to co-witness with the irons? Or do they already come ready to be mounted?

Depends on how you want to co-witness. If you want the irons in the middle of the window, you're all set. If you want the irons to appear in the bottom 1/3 of the window, you need a 7mm riser.
Since I use flip up BUIS, front and rear, I prefer to keep the EOTech as low as possible and co-witness right in the middle of the window. People with a fixed front sight seem to go either way.
