Recently bought a Vortex 6-24x50 Viper PST to be mounted on my Remington 700 300 Win Mag. The stock the is a Accuracy International AX; I need the scope to be high enough for a sight to go in front of it. What would you guys recommend?

Mount the scope as low as possible. Remove the sight if you need to. You will not need it anyway.
It is more important to have a more natural cheek weld(placement) on the stock than to have the sight there that will never be used.
Using a 50mm OB scope already raises the scope higher than is best.A 30cal will reach out and touch them. A 50cal will kick their butt.

The sight is an Armasight NVG (I'm in Texas now, so it is legal; and please, I know, this is Calguns, but I still love this place and trust coming here as opposed to other places). milehighshooting.com (where I bought the stock) told me I need to have 1.5" height as I bought the rail system that goes straight down the rifle (because I need to be able to mount the NVG in front of it for night shooting/hunting).Mount the scope as low as possible. Remove the sight if you need to. You will not need it anyway.

For that application I'd look into the single piece mounts typically used for AR's, except maybe without the forward offset. The ADM Delta mount has exactly 1.5" centerline height in the 30mm version:

Years ago before the invention of the adjustable cheek rest, getting the scope low was the the best option.
But today in the modern world, with the advent of the adjustable cheek rest, a high mounted scope is a non issue. I like the scope mounted high. Why, because it place the butt stock lower in the shoulder pocket which absorbs recoil better.USAF 1966-70

The standard 18 MOA cant that AI used for 30mm tubes would be perfect. You pick up 3mm of clearance when you go to a 50mm objective (vs. 56mm).
AI came out with a higher mount for the AX line (the AI 5656 used to be the biggest and highest), but they made one more higher for 56mm+ objectives to clear a flat rail. The 50mm objectives are fine unless they have a abnormally short mount.Comment
