What brand of ammunition would you prefer for a Stag Arms Model 2 AR15 and Springfield Armory M1A standard match?

It depends on what you want to do with it... your expectations of accuracy and your budget.
You'd be best off with Yellowneck86 brand hand loads.
For the AR: plinking means whatever is cheap. Anything you can find is good - Miwall reloads, Federal XM193, PMC, UMC... even Wolf with polymer coated steel cases is good. If you want accuracy on a budget, Prvi makes a reasonably priced 75gr load. For ultimate accuracy, Federal Gold Medal Match or Black Hills 77gr SMK. For defensive loads, Hornady 5.56 TAP or BH Mk262.
For the M1A - again, whatever you can find that's cheap (mil-surp Aussie, German, Port... SA is the worst). For accuracy, again Prvi makes a decent match load at a lower price, but Federal GMM is the go-to load. 175gr is better than 168.
