.625 vs .750 GAS BLOCK

Is there any major difference between .625 gas blocks and .750 as far as performance or is it purely to just fit the diameter of the barrel ?

.625 gas blocks are for barrels with a thinner diameter where the gas block goes. It doesn't have anything to do with performance of the gas system. You can't use a .625 gas block on a .750 barrel or vice versa, they simply won't fit.
