Remmington 700 Long Action / Short Action Question

What is the difference between a Remmington Long Action and Short Action?

Is it the cartridge size (type of ammo) or specific to the model?

It has to do with the lenght of ammo. Example The 308win/7mm-08/223/204ruger 243 etc use a short action. The 30-06/300win mag/7mm Remmag/ 270/280/338win mag etc use the long action.
A 30cal will reach out and touch them. A 50cal will kick their butt.

You can shoot 308 out of a Long action as well but just depends on the purpose you are going to use the rifle for.
