For your price range, you could buy a SKS and a Mosin.
Thats what I would do if I was in your position. Cheap ammo, both fun to shoot.
And you can replace both the wood stocks with synthetic for cheap if you want to. I wouldnt, but you could.
The Mosin can shoot farther, and the SKS can throw out a little more lead for defensive situations.

Actually, there are many... (SKS, AK, some AR's) Most are around or under $500. And they're all good.

I have a very nice Russian SKS, Laminated stock, Bayonet, the whole nine-yards... And it's under 500.

Can build an AR for $550.. since you have high caps.. just keep it featureless.

If you want AR, Smith & Wesson MP-15 is usually around 500.
