If I went from Burris XTR 30mm medium height rings (0.5") to low rings (0.25"), approx. how much will it change POI at 100 yds.?

Hrm. I actually just did exactly that, same rings and heights, on a remington 700 .308. Ammo is Russian Wolf stuff. Twist I believe is 1/12, 22" barrel. Scope is a Leupold Mk4 10x40.
