UPDATED PICS - POST #38
Well, after a couple years of enjoying and buying other guns (AR's, Rugger PCC, etc.) I've finally plunked down the $$$ for a left-hand bolt gun, just for me. After much research, deliberation and lots of input(thank you, Calguns), I realized that i REALLY do like to tinker, really DO expect to change aspects of this gun over time, and therefore, should probably set myself up for success by choosing the gun with the biggest aftermarket by far.
So, as we speak, a brand-spanking new, Left-hand Remington 700 SPS Varmint in .308 is now whisking it's way to my LGS:

There are only 3 options from Remington in LH 700 rifles. This one was chosen, specifically for the heavier barrel, because as much as think i MIGHT get out hunting one of these years, this is definitely going to primarily be a mid-range paper-puncher and steel-ringing fun gun. Not too worried about weight, and I might end up appreciating the heft for long, desert shooting sessions. Anywho, you might be
since it's a going to be a pretty vanilla build on a fairly common rifle, but I'm STOKED. 
Going to be looking at glass in the near future. Also considering a new trigger, but I have a nice bipod and a chassis already sitting waiting.
Plan is to set the rifle up with scope base, scope and bipod and shoot it as-is to see what ammo it likes best, THEN, I'll swap over to the chassis to see how much improvement I get. Fun stuff.
