Hogue MonoGrip with finger grooves is hand filling. If soft rubber is OK.
I have a pair of Stag Horn grips that are thicker than the standard 1911 wood stocks.

I bought a pair of magpul polymer grips and then stippled them with a soldering iron I bought from Walmart. People either love the way the look or hate the way they look but they are hands down the best grips I've ever had on a 1911. They have a thin profile, they have a ton of grip and there's a spot cut out for your thumb to release the mag.
