I am considering getting a P226 via SSE. What parts are typically changed or modified in the process (other than the hi-cap magazines)?

Nothing gets modified, your FFL should have a replacement barrel for the duration of your DROS and a sled to block off the magwell. You take possession after 10 days, switch out the parts then return them to the FFL right away.Comment

The gun most likely will have >10 round magazine in the package. Depending on the dealer you buy it from and the CA FFL, you either will have the magazines shipped to the CA FFL and they can exchange them with 10 round magazines or you have to buy CA legal magazines.
You will need to have CA legal magazine in order to perform the safe handling demonstration.
I got P226-9-SSE, the Texas dealer refused to send the magazines, I had to buy 10 round magazines /$40 each/.
