I know Enterprise Arms is known for their FALs, but I noticed that they also do custom work on 1911s and I was wondering if anyone has any experience with their 1911s getting customized there. It's right down the street from me and it would be very convenient for me.

Enterprise Arms is known for their out of spec FAL receivers. Their completed FALs are fine, but don't try to fit a parts kit to their receivers.
