Depends on what you want to do with it. I wanted to shoot competition, USPSA Production specifically, so I chose the SP01. To shoot IDPA I would have had to lighten the SP01 or would have gone with the 75B.
Range toy, either one(actually, prefer the SA). HD, either one, but like that the SP01 came with nightsights. -
I chose the SP-01 over the 75B simply because the full dust cover looked cooler.Comment

I was trying to make this decision myself recently. I ended up buying a CZ SP-01 which I just picked up last night. My previous handgun was a CZ-75 compact model, pretty much the same as the CZ-75, but with a shorter barrel and slightly shorter grip. Unfortunately, my compact (which was one of the rarer duo-tone models) was lost in a home burglary.
Things I like about the SP-01:
The stock sights are a lot nicer. The standard CZ-75 sights are on the small side. The SP-01 comes standard with Meprolight night sights, that are much more usable (even in daylight).
The sight radius is much nicer than my compact (this doesn't really apply to the standard CZ-75).
The accessory rail is a great option. Easy to add a light or a laser.
Stock grips are fantastic, I believe the CZ-75 comes standard with plastic grips that are nothing to get excited about. The rubber SP-01 grips provide just the right amount of grippiness.
Checkered front and back strap, nice option, not sure how useful in practice.
Redesigned beavertail. Allows for a higher grip, the feel of this gun in the hand is simply amazing (that said the CZ-75 was the best feeling gun I've ever handled prior to the SP-01).
Better trigger than my previous CZ, although this probably varies. While I really liked the trigger on my compact, it had a lot of stacking before it broke. Dry-firing the SP-01, both the DA and SA are remarkably free of stacking with a crisp break.
Things I like about the CZ-75:
The classic looks. The SP-01 is a good looking gun that just screams that it means business. However, the classic lines of the CZ-75 just have a certain sexiness to them that I find to be a bit lacking on the boxy front end of the SP-01.
The weight. This one isn't that big a deal for me since it's unlikely I'll carry, but the CZ-75 is 6oz lighter than the SP-01.
The price. CZ's are in short supply in CA in general, but the demand for the SP-01 has really driven up the price. Expect to pay a premium over the CZ-75.

SP-01 for me due to the better beavertail & ergo's, nightsights, and I kinda' like the extra weight.
I'm sure I would like the 75B as well.Too many hobbies, Too little time.
Mind you, I'm 5'7", 180, with a visible Ab...Comment

I think the SP-01 balances better in your hand with a full magazine. The weight in the nose means a bit less muzzle flip when shooting, although any 75-based gun is already good in that category. Plus, you can get a slightly higher and more comfortable grip on the SP-01 thanks to the extended beavertail.
Ambi safety, if you care. 75b doesn't have this.
Thicker barrel. If it matters, which I'm sure it doesn't.Comment

I bought the SP01 and it is great. I have shot the 75b and I don't think you can go wrong with either. Only thing I noticed about the SP01 is mags aren't cheap.Stupid people; They're breeding.

For me it's the CZ75B SAO. I like the beaver tail and flat trigger.Comment

You can install yourself. But night sights run $85 to $150 depending. With install you'd be looking at spending more for the night sights than the price difference between the 75B and the SP-01.Comment
