what is wrong with just using a empty magpul magazine rebuild kit with no floor plate, no follower, no spring...

gun can only accept 1 bullet in the chamber...

My AR pistol came with a Delrin single round sled, it is sweet. Just a big hunk 'o Nylon.

Also when you shoot with no magazine in, you get hot gas and shockwave shooting out of the mag well . Plus the sled makes the pistol complete as a single shot when the magazine is locked into place via the bullet button.
Why are you actually shooting with it?

I ended up just taking my crappiest mag and crammed a whole bunch of junk in the bottom to prevent actual loading of rounds into the mag.

Sooooo ... you took a normal-cap mag that you owned, and you made it into a no-cap mag instead?

Can you rebuild it back into a normal-cap? You might be better off getting a 10-rounder to do that with, and keep the 20 rounds intact.

Does it hold the bolt open after the shot?

No it does not hold open the bolt. You have to do that manually. I have another one I'm working on that will hold open the bolt, I just need to refine it a bit.

Seriously... The single round mag is just for compliance. Once it's finished you can just use a normal mag...
