What would be the best way to have a 1911 that shoots 357sig? I am thinking of getting a new slide and building it for that bullet for an existing 1911 45acp. Is this possible?

Ideally, buy one chambered in 40 S&W and get a new barrel fitted.
You certainly can build a whole new top end for your 45 as well.
The mags will just be 10mm mags with a spacer in the back to take up the extra length.
Since you are building on a fullsize frame, you might also consider doing a 9x25 Dillon which is a 10mm necked down to shoot 9mm bullets.
Of course you have to reload for this one, but it's a rocket launching SOB...
