Does anyone know if the SA 1911 MilSpec dovetail sight notches are compatible with Novak style sights?

No they are not. The Mil Spec has a blade rear in a dovetail, Novak sights need a low mount Novak dovetail

I don't believe the mil-spec uses the Novak...... Although the Loaded does. You can always have the slide milled for any cut you like.

Nope. That's the next thing I'm doing to mine. Have to get some new sights on it. The dots are too small and I've sliced a finger on the stock sights during a tap and rack drill with snap caps.
