I'm afraid the recoil on a .308 pistol would be ridiculous. Fun, no doubt, but ridiculous. I just don't want a handgun shaped bruise on my forehead. 

223 and company kick much lighter. Sure they're kinda long rounds to shove into a pistol grip. I'm sure a pistol that shot 5.56 wouldn't be for everyone but I have big hands and feel confident I could manage.
While there are certainly other, more-exotic ammo options out there, one of the major attractions to a .223, 5.56, or 5.45 pistol is the cheap and abundant ammo. Elite Ammunition may have nice 5.7mm ammo but it's $50-60 per box. I try to stay at or under $0.50 per round.
