I'm interested in a 1911 style pistol thats not on the list,

Can I have the mag blocked to hold 0 rounds and pin the magazine in place with a flat head screw under the grips to make it single shot just like the ak pistols? or am I missing something ?

You are missing overall length and barrel length requirements to meet the single-shot exemption.
