In all honesty have you considered buying a Stainless model and doing the polishing yourself. It would be a fun little project and if you ever scratched it, you would know how to fix it.

Kimber "Raptor" is nicely polished Stainless. $1300.
Not to mention as Jonesy72 said you can get busy with rubbing compound at make it look almost like chrome

That nickel RIA 38 super sounds like the way to go if you need it new and on the roster. Otherwise, just pick up a beater 1911 and send it out for chrome like the others have said.
