An extended slide release comes standard on a G34. I have heard many people remove it and put a standard slide release. Why is this done??

Mmmm.. haven't heard that one; the only reason I can think of would be that they're concerned with interfering with it operation when shooting with the weak hand trigger finger laying against the left side of the frame?/Chris

Almost. With a good high grip some right-handed shooters have trouble with their strong hand thumb riding the slide stop lever. The weak-hand trigger finger will normally be just beneath the trigger guard.- Brian
