Need help looking for one dedicated handgun.

I've been shooting since I was young, but my family was never into handguns. I've fired shotguns and rifles, with shotguns being my favorite. I've only fired handguns on a few occasions, and it's been a few years since the last.
I'm the type of person that likes to have 1 thing and use it and know it very well. 1 instrument, 1 motorcycle, 1 handgun, you get the idea. I'm looking for a handgun that can conform to my personal needs that will be my baby. I'd like to keep cost down, but if there is 1 handgun that fits me perfectly, I'm patient enough to wait for it.
What I'm looking for:
- Reliable
- Easy to maintain and work on
- Simple in design or function
- Accurate within reason
- Fun for range practice
- Self defense (hopefully not)
- Functional as a concealed carry (no pocket guns) Or if the firearm has a concealed carry sibling that I could purchase if I were ever able to get a CC permit.
- Functional as an open carry (my job description is changing a bit and I might be required to open carry as a security guard to investigate clients tripped house alarms)
Some other considerations:
- I prefer lower recoil ammunition and firearms. Although I am not opposed to higher ones, if it still meets the above requirements. (range fun) I do have some occasional join pain that comes and goes in my fingers and wrists.
- I am not opposed to revolvers, I like them but have about the same amount of experience with them as semi-auto pistols. The simplicity is what attracts me.
- I'm happy to try out suggested models at ranges
- I would love to have something that can easily convert to .22 for range fun, or if there is another handgun very similar in .22 flavor that I could purchase in addition to my primary handgun.
- I don't care for flashy nonsense. Function is the primary concern.
- I like the feel of compact and subcompacts (with the addition of a little pinky support)
- I'm not opposed to used firearms
In my week or so of research I've had my eye on a few, like the Glock 26, S&W M&P Shield. Even strange things like the unique recoil design of the Chiappa Rhino have caught my eye. But my research has been limited and I'm sure I've missed a lot of great options. I only started researching revolvers yesterday. I love the idea of being able to shoot .357 and .38sp out of the same firearm.
I visited a local gun shop the other day and had my hands on a G17 and a G26 (no G19 or similar frames to try). The G17 grip length felt excessive (especially considering the mag is blocked to 10) and the G26 felt comfortable, a little more comfortable with a small pinky supporting mag. I have slightly above average sized hands with longish fingers.
I'm the kind of person that likes to do a lot of things myself. I'd be interested in eventually loading my own ammunition, I like that connection you get when you put time into things like working on a vehicle instead of taking it to a mechanic. Saving $ on ammo would be nice too.
