Are these strictly through S&W?

I'd love these in OD Green and Black, maybe more aggressive checkering on the front.

Would it be easier to find a G10 custom grip maker in San Diego?

Check out VZ grips, they have a lot of similar offerings you might like as well as color variety. Wait time was much shorter for me than they estimated.

I believe those are Altamont grips. There is a similar one shown on their web site, but not available yet, coming soon.
