Multi-state CCW courses in Central Valley

Hello all, my family and I are going to be headed to NC for a vacation in a few weeks. Given the civil unrest we've seen I'd like to carry a pistol for protection. I've heard there are multi state reciprocity courses that can make this happen.

I'm located in Manteca, does anyone know some instruction in the area for these classes?

North Carolina does not issue non-resident carry permits.

North Carolina honors carry permits issued by all States.

Open carry is legal in North Carolina, but local Governments (city/county) can ban it.

"no guns" signs have weight of law in North Carolina.
^It's illegal to carry inside any establishment that has a "no guns" sign posted.

You must immediately inform LEOs when you are carrying a firearm.

Since North Carolina honors all State permits and your trip is in a few weeks...

The AZ CCW permit is the fastest non-resident permit you can get, takes about a month.

On average it takes about 3-4 months to get a non-resident carry permit from a shall issue State.

I know this, I held a CCW when I lived in Winston-Salem and Durham.
