Can you share your sharpening process?
I use a belt system with progressively finer grits, as do most custom knife makers around the world. What tools do you use? My belt system, my hands, along with a leather strop or my jeans to take the burr off. Do you reproduce from 22 degree to 15/16 degree? I match the same angle that the blade maker put on the knife. I do this for many reasons, but the short answer is because a soft metal won't hold an edge with a steeper angle. The same holds true for a harder metal. Putting a less steep angle would not be using it's hardness, or the knife, to it's full potential. Every knife (and metal) is different and every knife has a different purpose. You wouldn't use a hatchet for sushi, and you wouldn't use a sushi knife to cut firewood. I hope I have answered your questions. Thanks for asking. Matt __________________ |
