Shalhoob Meat Co in Santa Barbara processes for about $3/lb, if I remember right. This was as of 12/2016. I process my own but found out that they do when I went in there for some sausage mix and pork belly fat. They have a great Sweet Italian mix of anyone is interested. Hope this helps!

Emailed with Harmony Farms. They are the only processor I could find in the "los angeles area" who are open on Sundays (open til 8:00pm every day).
They are a fantastic butcher shop, and I'll report back on my processing experience in a few weeks. They charge $1.25/lb for processing, and an extra $6.00/lb for smoked sausage. Meat is hung for a week and vacuum packed for delivery to the hunter. Bring meat in with tag, license, no hair, no guts.

I think i found an optimal solution for ammo can labeling. I made this target for the NRA's Marksman pistol test. I think it's a lot better than the paper plate they suggest. |

Quick update: brought two pigs to Harmony Farms yesterday, experience was very good. They were busy, but took the time to go through things, made sure our papers were all in order, even cleaned our coolers out for us.
Will update when I get the meat in a week or two.

Picked up most of my meat from Harmony Farms on Sunday.
They can be a bit disorganized, so I suggest you call the day you plan to pick up your meat to let them know you're coming. (I called the day before, and the info never made it to the guy responsible). With that said, the visit to pick up our meat was not overly long, the meat is nicely divided and vacuum packed. At drop-off they offered to cut the larger parts into smaller sizes suitable for two people (no kids in my house), and they held true to that. The ground meat was even packaged in 1-lb packs. They sell chunk charcoal cheaper than supermarkets, they sell ice (water and dry) for prices that approximate ice vending businesses. My one complaint is: their Polish Sausage is the "authentic" recipe (basically garlic, salt, and pork). It's really good, but it's not what I was raised on (Hilshire Farms) as Polish Sausage. (I am of Polish heritage... but that mass-market sausage is SO GOOD...). It's also, by default, not in casings... I know to ask about that next time. One of their butchers even helped me lift my cooler into the car. My bacon should be ready in 2 weeks. All in all, I'm very happy, and will go with them again.
