Default 7.62x51 shot in a bolt action?

Could you safely shoot a 7.62x51 out of a modern 308win bolt action rifle without issues?

yes.
unlike as with 5.56Nato and .223, its reverse situation with .308.
Winchester .308 cartridges are typically loaded to higher pressures than 7.6251mm NATO cartridges.

That was long ago debunked. No significant difference between typical cartridges of either designation. It's one of those myths that seems to persist on the Internet. If it's not safe for one, it certainly won't be safe for the other.

The only issue that you may encounter is that some sporting arms do not have enough striker power to consistently fire the hard primers found on some military spec cartridges. I've found this to be more of an issue with foreign produced ammunition than domestic.

debunked or not, "similar" is not "the same", specially in pressure department

I shoot IMI 7.62x51 175gr out of my Remington 700P with 26"

Only issue is, i get sticky bolt lift. Sometimes bad enough where i have to slam it up with the bottom palm of my hand.

This.

I had to use a rubber mallet on the bolt handle to get the stuck shell to eject.

Throating the chamber to 7.62 fixed that issue

Yes, I shoot lake city 7.62 all the time in my Ruger GSR and my Savage 99 when I just feel like plinking.

Check with the rifle manufacturer. Most will specify what ammo is OK and not OK.
