I worked as a butcher for a year in my teens, and I've been a kitchen knife nerd for years. My preference is to build a mixed set because the store sets either force you to have knives you don't need, or just aren't as good in performance as brands that may not be available in sets. A typical kitchen needs a large knife, a small knife, and a bread knife in that order, and the bread knife isn't a must-have unless you are regularly making large loaves, but they are also nice for watermelons, etc.

Depending on how often you have to break down whole chickens or large fish may dictate another speciality knife for those needs. But nearly everything else can be handled with two knives.

Although I started on European blades, I now prefer the harder, thinner, Japanese designs.

If I had to start from scratch today and wanted a "good functional performance but not expensive" starter set I can recommend this:

I have a Buck cutlery set. Only one type of handle they offer is dishwasher safe, so beware.

Do not buy unless you have held. How it feels in your hand is most important.
8 inch chefs knife, 8 or 9 inch serrated bread knife, 4 inch pairing knife are the three most used knifes. Maybe a carving or filet knife if you prepare a lot of whole meats . A good pair of scissors and all your kitchen cutting need are done. I like German or American knives, generally the grind is not as steep as Japanese, so less rolling of edge and generally stays sharper longer. Unless you make Sushi all the time then maybe get a Japanese knife.

So I'm thinking of getting my wife a nice set of knives. She does most of the sammich making and deserves a good set of knives.

I saw this set and kind of like it.. I like the look of Damascus.

As noted directly above your post, she really needs to hold them.

My wife doesn't like my Shuns - the 'handed' D-shaped handles just don't make her happy.

Earlier this year I purchased a Sabatier **** Elephant 8" Chef's knife. Didn't really need it, but I wanted it ;-)

It came a tad less sharp than I expected to. But given how busy the French are going on strike and taking a smoke break for a glass of wine - I am not surprised. A few minutes with a stone and it got a nice edge.

Since then, it became my favorite knife. It's so nimble to use and just a great all around knife.

I've been using the Shun Premier series for little over 2 years now. Thing is sharp as a razor to this day.

I decided to make my own set which is similar to the 5-piece set they offer.
2 various size chefs, a paring and steak knife, and then their shears and honing rod.

I've taken a big file to a few knives to round the butt and make them sorta pistol grip. Much better.

go down to Smart and Final, buy a few of their $20 kitchen knives in different sizes and see which ones you use the most and actually like using then spend the big bucks on some fancy ones and get the sizes you use instead of having a whole rack of knives you never use.
