Just a fwiw from a guy who uses Japanese style knives.

WAY better quality knives are available from Japanese companies, and blacksmiths at this site.

Often for far less money.

Just something to consider.

I've had good luck with some of the Kai knives. I love their Pro handles - the wide grip is VERY comfortable and the steel had held up great to my amateur food prep. We have a set of Victorinox Fibrox knives (that are great), but the Kai Pro Santoku feels much more sturdy, and holds its sharpness a bit longer. I find myself grabbing the 7" Kai for practically everything.

If you're looking for a good starter "do everything" knife, any of the 7-8" Santoku or Chef's blades will do the trick.

I'm pretty well set on my kitchen set, but I just ordered 2 sets of the Kai steak knives for my parents. My wife and I have been using them for ~ 4 years and they are fantastic. It will be a nice upgrade since their current streak knives are almost as old as I am.

My Shun premier is the only knife I’ve ever had chipping issues with. I’m currently looking to replace it. Not a fan at all. Yes, I was using it properly. It’s just a lemon.

The knives I ordered arrived yesterday. 2 of the 3 have the aforementioned "XXXX" on the blade, but I can't find a single thing wrong with them. One of the knives doesn't even have that, so that's a win.

I have one of these in 210mm. Blue #2 core and very good for the price. The seller is well respected on the kitchen knife forums.
