Default Dry Salami?

I have everything for pizza except some good meat toppings. Anywhere good to get salami or are there better meats that donít need refrigeration?

I know it's not the exact thing you're looking for but I'm going to suggest bacon bits (the real stuff not that processed plant material bacon bark chips).

Unlike a lot of other meats you can just add a Sprinkle to whatever you're cooking. Makes everything a little better from mashed potatoes to boiled toilet paper.

And you get to decide whether you use a very little bit with each meal or eat the whole bag.

I bought 5 1# (15.2oz to be precise) pkgs of pre-sliced Gallo salami on b4 the "crisis" on sale for just $4/pkg. Normally sell for around $6.




Just finishing the last pkg but they're probably all gone from the stores now because they come in vacuum sealed pkgs and can be stored on the shelf w/o refrigeration for months. The date code on my last pkg which I bought a couple months ago says Jun 22, 2020.

So, if you're looking for more food to hoard, I'd try to find some. LOL!

Mullanari salami is my favorite. Often pick up a 3lb stick when they have it at costco...good to know about the website.

I always buy in bulk when I see a bargain.

I bought a dozen cans of this luncheon meat Spam look/taste alike for $1 a can at my local Dollar Store over 3 months ago. Have enough to last me for years unless I'm forced to eat them while holed up during this "crisis."

The Dollar Store has has packages of Pepperoni, Genoa Salami, & Hard Salami. It is in sealed packages and does not need refrigeration. I've been buying them for years and I've have them on the shelf for at least 6 months(plus who knows how long it took to get to my house). I've used it on pizza, sandwiches, and with cheese & crackers - I like it. I was at my local $ Store yesterday and they still had lots (not as much as when I got there, but still plenty). There is also Summer Sausage & All Beef Summer Sausage.

I also "stocked up" on 10 cans each of canned brined sardines and mackerel (about 5 oz each) for just $1/can (no tax) which are both high in protein.

I often snack on them w/crackers. Just add some salt/pepper and extra virgin olive oil to taste.

High fat meats don't store well because the fat will go rancid. This is why beef jerky is made from the leanest cuts.
Only way to store fatty meats w/o refrigeration is lots of salts or chemicals.

If you have a freezer, best way to store high-fat sausages.

I generally stay away from any sausage that has sodium nitrates and nowadays costco and your local market stocks italian style deli meats without nitrates. I say get a second freezer that'll solve most of your problems.

I love the Columbus Salami Secchi (the smaller harder salami with the white powdery paper on it) tastes super good.

Yeah it's definitely a paper, like a wax paper (you can peel it off and see). The white powder is a mold they purposefully introduce to keep the meat from spoiling while it cures
