In the Reno/Sparks area there may be coyotes and rabbits but shooting in that part of Washoe county is pretty severely restricted unless you're on a range. You need to get well away from the urban areas. Link here.

You do no currently need a license to shoot ground squirrels or coyotes in Nevada whether or not you're a resident. Your California license is not valid in Nevada for game. You'd have to check with the California Fish & Game folks to see whether it would still be valid if you became a Nevada resident.
