Tonight was the cottontail and trout . . . the jack is brining for tomorrows dinner.

The recipe for the Cottontail rabbit - it was tasty - slightly tough on the legs, but the back strap was perfect. Cooked at home, no time to cook in the campground.

Make sure and reduce the salt, my wife ended up killing the saltiness with some lemon juice and sugar. The my guess - the bacon was very salty.

Cottontail tacos for me!! left it over night in water with a pinch of salt, then boiled it for two hours and fried it up with tomatoes, onion, jalapenos and some garlic salt for seasoning. It was awesome and very gratifiying to eat my first kill.:D

I'm glad you guy's are enjoying your take from the fields....:grilling:, wait till you try some Doves and Quail I like the Quail better but all makes for fine eating.

Awesome. There's something hard wired into us about putting food on the table, I took boar a couple tears ago, it was the tastiest food I have ever eaten, sausage, ham steaks, ribs, roast, it was all good. i am convinced the primal "get food" gene makes it taste better.

Here the jack rabbit i fixed. Just the saddle cooked with cinamon, onion, and red wine vinegar.
My own recipie, I call it "Lone Pine Saddle" goes great with garlic bread, pepper cheese, and fruity wine.
