I've been wanting to get a Tanker but I'm wondering about all the malfunctions and unreliability issues.

What exactly are the problems associated with these conversions?

Feeding issues, ejecting, accuracy etc...?

Any input greatly appreciated....

^ This. If you want something a little different, have it built with a Beretta style gas system, like this one (yup, it's mine). The Beretta gas system allows for a straight op rod - no bends means it's less likely to suffer a bent op rod under extended use.

"Tanker" Garands tend to suffer from issues with op rod spring rates from the use of cut-down springs, op rod problems due to the severe bend required to make a "Tanker" work at all, and there's no "standard Tanker", they're different from builder to builder. Shuff's Mini-G uses an op rod spring available from Midway, no having to buy a full size Garand op rod spring, cut it down and hope it works.
