I've got some custom grips coming -
And looking towards LTC -
What 1911's use full sized grips but in an easier to conceal size...?

Generally, you'd be looking at Commander type models, either with the original 4.25 " barrel or 4" . Commanders and Government models utilize the same length grip, although the frames are different in other areas.
The only exception to the 4.25 or 4" barrel models is the "CCO" type pistols that utilize a Commander length slide on an Officer model type frame. Officer Models and Defenders and similar pistols have shorter grip frame that requires different grips.

Yep, What Redcliff said.
However, I have found that the hardest part to conceal is the grips, gripframe etc. Longer barrels don't really seem to make much difference for me. YMMV:)
