I just got a GP100 357 with a 4" barrel and was wondering if it would stabilize heavy bullets like the 200 grain 357 loads from Cor Bon? The twist rate is 1:18.75".

either way you most likely wont notice a difference, if there is it is incredibly minute.
just go shoot

not something you usually have to worry about with a pistol....

This is my first handgun. I'm used to my 22-250 that can't shoot anything over 55 grains even though they sell lots of heavier bullets for it.

Ruger .357s seem to be factory sighted in with 158 grain bullet weight loads.

You should have enough sight adjustment for 200s, and it'll definately stabilize 'em. I have the same twist rate and similar length Ruger barrel in my NewVaq357, 4.68" tube.
If it's a fixed-sight it'll probably be dialed in right for 158s.
