Searched, didn't find anything:

The montel Williams post made me think about it,

WHY do they require (not oppotional) the race info? So they can selectively disarm races in certain areas ? They know your race, address and weapon lists. I'd think it's illegal to even ask that question?

Its just another identifying category to not confuse two people with the same name. Don't think it goes beyond that.

Maybe part of FBI crime statistics of how many of a particular race are buying guns.

Ben at Marin Firearms used to put down "American" when he sold me a gun. I think the question may have been worded differently then.

I never got that question. I just put Native American like all other government documents.

The Federal Form 4473 stays with the dealer so probably not.

The DROS information is submitted to the CA DOJ but I don't know what CA does with that info.

Is race one of the things that a gun shop has to tell NICS when conducting a background check in other states?

I don't know if they have to, but they have every time I've ever heard a NICS check made. So, I assume that the answer is probably "yes".
