I am surfing around and it seems like there are only Wasr's, henderson Wasrs, Lancaster ak-47's, and bulgy AK74's from random manufactureres available. I want a real ak, not a WASR 10 thats been converted to double stack, but dont want the Lancaster Cream of the crop. Where is the middle ground on a 7.62 AK? Do I need to just watch the private sale forum vigilantly for a while?

There's a nice underfolder in the for sale section for $650 now and it's in Bakersfield which is close to where we live.

The seller is gozuki. Take a look and see if it works for you.

Saiga conversion=Russian made AK. You can find Saiga's for around $400 if your google fu is decent. I'm sure somebody here can point you in the right direction to get it converted to a more standard AK configuration.

for saiga's you can go with a full arsenal conversion like the sgl-20 with maglock or a standard saiga and do the conversion yourself it's fairly simple with the right tools.
