It's the mill out cut of the slide for the rear sights. It's the most common for non gi 1911s. Very popular.

Look at pretty much any Springfield 1911 that isn't a mil-spec model.

I'm not familiar with the Kovak cut, but I am familiar with the Kojak cut:

Springfield also uses LPA sight cuts like on the Range Officer.

So is that just more popular with folks who want the rear sight blended to the frame? I like the question. I've never learned the difference either or why it was popular.

TIL something on cgn.

Novak sights gained popularity for their sleek, "no snag" profile as compared to rear sights with a vertical, front facing plate which could snag or hang up on material.

I never understood the "no snag" feature, as all holsters I own have relief cuts to accommodate the rear sight, and even a Commander or Officer sized 1911 seems careless to just carry loose in a pocket. (my opinion)

Novak is a specific brand, but Novak style applies to other brands of sights with similar profile/features.

I wasn't aware that there is an actual Novak "cut" machined into the slide.

I'm sure someone who knows more than I can set me straight on this.
