Here is a list of all meat processors in CA, some of the info may be out of date, call for pricing.

Last year, he charged $55 for butchering a deer. He makes some of the best sausages I have eaten. He charges extra for that. How much depends on what you have him add. Bree's Meats is still there, and still does wild game processing. Anything too big for the front door, you can bring in through the back door :)

Do it yourself! I feel that "post mortum processing" is part of the overall hunting experience and it's not hard once you know some basics. I even took a meat cutting class in college.

You are correct, but the meat proccessing and especially the cutting makes all the difference. Meat cut properly makes for fine eating, meat cut and proccessed incorrectly can be a culinary disaster.

There are books, and I would recommend dvds, on proccessing, and butchering. Get these and learn how to do it, and you will enjoy a table full of bounty the whole family will enjoy.

These guys did 4 elk and a deer for me this year. Did a great job!

They do a lot of work for MUM (http://www.mumwildlife.com/) from Santa Rosa Island. Which is how I heard of them.

I sliced and diced my last boar since I had to field dress it and pack it out. I was able to salvage the better cuts, but hacked the rest and ended up grinding it into sausage meat. I'll leave this job to people that process meat for a living.
